Monsooned Malabar is produced by exposing sun-dried green coffee to the humid monsoon winds along India's Malabar coast for several weeks. The beans swell, turn pale gold, and lose much of their original acidity, taking on a heavy body and a distinctive earthy, spiced character.
The process traces back to the era of sailing ships, when green coffee travelling from India to Europe was naturally transformed by months of sea humidity. Today the same effect is recreated on the coast under controlled conditions, giving roasters a consistent, low-acid origin coffee every season.
