Processing

Coffee Processing Methods — India

Processing method significantly affects cup profile. India uses washed, natural, and its unique monsooning process.

Washed (Wet Process)

The coffee cherry pulp is removed before drying. Beans are fermented in water to remove the mucilage, then dried on raised beds or patios.

Cup: Clean, bright, higher acidity, terroir-driven flavours

Grades: Plantation AA/A/PB/B, Robusta Parchment

Natural (Dry/Unwashed Process)

The whole cherry is dried with the fruit intact. The natural sugars ferment and infuse into the bean during drying.

Cup: Fruity, complex, full body, natural sweetness

Grades: Arabica Cherry, Robusta Cherry, Monsooned Malabar

🌧️

Monsooning

Unique to India. Green beans are exposed to monsoon winds and moisture for 12–16 weeks, causing them to swell and lose acidity.

Cup: Low acidity, heavy body, musty/earthy, iconic Indian character

Grades: Monsooned Malabar AA (GI Tagged)

🍯

Honey/Pulped Natural

The cherry skin is removed but varying amounts of mucilage are left on the bean during drying — between washed and natural in style.

Cup: Balanced — sweetness of natural with clarity of washed

What is the difference between Arabica and Robusta from India?

Indian Arabica (mainly from Karnataka) has bright acidity, medium-to-full body, with notes of chocolate, citrus, and nuts. Indian Robusta (mainly from Kerala and Karnataka) has bold body, low acidity, high caffeine, earthy and spicy notes — widely used for espresso blends and instant coffee production.

What is Monsooned Malabar coffee?

Monsooned Malabar is a unique Indian coffee with a Geographical Indication (GI) tag. Green beans are exposed to monsoon winds and moisture for 12–16 weeks on the Malabar coast, causing them to absorb moisture, swell, and develop a distinctive low-acid, musty, heavy-bodied profile unlike any other origin.

How do I evaluate the quality of Indian coffee before ordering?

Request physical samples (1–2 kg) from LIT COFFEE. Evaluate: moisture content (should be 10–12%), screen size, defect count, and cup profile. We provide lot numbers, technical specifications, and cupping notes with all samples. Sample costs are credited against confirmed orders.
